Just like the other popular Aoste Stickado varieties, the salami sticks are air-dried. This gives them their typical flavour. The dough for the bread coating is made from spelt and rye flour. Spelt is considered to be particularly rich in nutrients and better tolerated than comparable wheat products. This is why it is very popular with consumers.
